Honeyed Leg of Lamb for Christmas
Leg of lamb
4 tablespoons of liquid honey
2 rosemary twigs
2 tablespoons of oil
2 garlic cloves
Salt & pepper to taste
Calories : middling
Preheat oven to 180 °C : 1 hour cooking time
or for slow cooking at 155°C 2,5 hours (my recommendation)
Make holes in the leg for the garlic cloves, add rosemary sprigs, salt & pepper the leg of lamb.
In a small bowl, mix the honey & oil. Pour over the leg of lamb.
Place in the over taking care to baste from time to time.
If you like to cook with wine, add a ¼ pint of red wine during the cooking process for an extra special taste.
Don’t hesitate to add wine if the dish looks a little dry.
Serve with vegetables or cous cous for a different Christmas meal.
