SEPTEMBER'S STUNNING SUNSHINE

DARTMOOR is enjoying amazing sunshine, the bees and Peter are happy. There are berries and various fruit trees in every corner of the Moor. The animals are fattening up for the winter months & the bees producing more honey.
However the winter is not far off & we like to please our families by offering them tasty & wholesome food. Homemade soups are one of my favorites, especially Butternut or Pumpkin soup, with a little coconut cream & some spices. Why not try it, here's a recipe that you may enjoy:
Pumpkin soup
Ingrédients for 4 to 6 persons :
1 pumpkin (2 kg approx)
A large potato & carrot
1 large spoonful of Coconut cream
50 cl chicken or vegetable stock
A teaspoonful of nutmeg powder
Salt, pepper
Croûtons /crusted bread fried in garlic if you like garlic!
Parsley, estragon & celery salt
Cook slowly for an hour before making into a soup. Add the cream at serving, add a parsley leaf to decorate.
MUSHROOM picking time: don't be tempted by the pretty ones, take care in choosing & ask an expert before eating them. The Porcini mushroom is easy to recognize so go hunting, it's such a peaceful & natural activity.
